As we enter our second month of self-isolation, my co-isolation buddy Amit and I find ourselves inspired to bake, not as a way to pass the time, rather as a constructive way to nourish our souls. We both enjoyed indulging in impromptu trips to the bakery to satisfy our sweet cravings, however with most bakeshops closed an our biweekly outings limited exclusively to the grocery store to stock our fridge with only the essentials - we've turned to home baking as a refuge, saviour and fun way to express our creativity... Our new reality has resulted in a significant increase in snacking and decrease in physical activity, motivating me even more to create treats that are healthy (no refined sugar, lower in carbs, higher in protein) to avoid the corona nineteen (think freshmen fifteen...). The recipes here do not provide comprehensive step-by-step instructions or perfectly filtered pictures, rather serve as a placeholder for ingredients proportions and combinations for some of my inspired creations. Most of them will likely be micro-portions, as I like to experiment with small batches in the toaster oven to help save on costs and reduce disappointment if a batch doesn't hold up.
