Nutty Energy Bites

These energy bites are ridiculousy easy to make! Simply mix all ingredients in one bowl, place drops on a baking tray and pop them in the oven. Ingredients can be easily substituted as the wet/dry ratio doesn't matter as much with this recipe. Using a generous amount of cocoa powder adds a nice chocolatey taste without the sugar or guilt found in chocolate. 
Ingredients (mix everything in one bowl)
1/4 cup - Peanut butter
1/4 cup - Rolled Oats
1/4 cup - Quinoa flakes or cooked quinoa
1/4 cup - Cocao powder (optional)
3 tbsp -- Maple Syrup
1 flax egg
1 banana (extra ripe and sweet)
1 tbsp -- Chia seed
1/2 tsp -- Vanilla
1/2 tsp -- Baking Powder
1/2 tsp -- Cinammon
Pinch of salt
1/4 cup - Dates (finely chopped)
1/4 cup - Walnuts (finely chopped)
1/4 cup - Hazelnuts (finely chopped)

Bake at 350F for 12 minutes

Yummy Gooey Chocolate Chip Cookies

This micro-batch was my first time baking with tahini and is great vegan alternative to the classic chocolate chip cookie. ​The batter was very oily, however the cookies came out of the oven moist, chewy and not at all greasy
WET Ingredients:
2 tbsp -- Coconut oil
2 tbsp -- Tahini
3 tbsp -- Honey
1 flax egg
1/2 tsp - Vanilla

DRY Ingredients:
3 tbsp -- Coconut flour
1 tbsp -- Whole wheat flour / Oat flour
1/4 tsp -- Salt
1/4 tsp -- Baking Soda
Dark chocolate (as much as you'd like)

Bake at 350F for 12 minutes

Choco Coco Bites

The batch shown here was made on March 19th, and was my first 'micro-batch' experiment. Feel free to double up the recipe, as we finished these mini cookies in less than 24 hours... 
WET Ingredients
1/4 cup - Almond Butter
2 tbsp -- Sweet (maple syrup)
1 egg / 'flax egg'
1 tbsp -- Coconut oil 
DRY Ingredients
1/4 cup - Coconut flour
1 tbsp -- Cacao
1/4 tsp -- Baking Soda
1/8 tsp -- Salt
1/4 tsp -- Cinnamon

Bake at 350 F for 10 minutes

Sweet Potato Brownies

This Easter weekend we exchanged our fondest Easter memories and traditions which consisted of chocolate eggs and the occaisonal chocolate bunny. This inspired me to bake, for the first time ever, a batch of creamy chocolate brownies...
WET Ingredients
1 cup --- Sweet Potatoe Puree
1/2 cup - Nut butter
1/4 cup - Fat (butter or coco oil)
2 eggs / 'flax-eggs'
1/4 cup - Sweet (maple syrup)
2 tsp --- Vanilla
DRY Ingredients
3/4 cup - Cocoa
1/2 tsp -- Baking Powder
1/4 tsp -- Salt

Bake at 350 F for 30-35 minutes
​Optional: Add nuts and chocolate chunks to the batter :)
